gluten free choc fudge cookies

i know i’m supposed to be trying to lose weight.. but i couldn’t help but whip these up yesterday while i was home with the kids.. these are amazing!!
220g dark chocolate, chopped
60g unsalted butter, chopped
1 cup (150g) plain flour (I’ve used gluten free, but you can use regular)
1/2 tsp baking powder
a pinch of salt
2 eggs
3/4 cup caster sugar
1 tsp vanilla essence
1/3 cup (55g) icing sugar
1) Melt the chocolate and butter in a heatproof bowl over a pan of simmering water and stir until smooth. Let it cool a bit.
2) In a seperate bowl, combine the flour, baking powder and salt.
3) In another seperate bowl (blahh the washing up!), beat the eggs and caster sugar with an electric mixer until pale. Add chocolate and vanilla. Mix. Add flour mixture. Mix.
4) Cover bowl and leave in the fridge for 45 minutes.
5) Preheat the oven to 160c
6) Line baking trays with baking paper.
7) Put the icing sugar into a small bowl
8 ) Take a heaped teaspoon of the cookie mixture and roll into a ball.
9) Roll it in the icing sugar and then place on the tray.
10) Flatten it with your hand and then repeat steps 8 & 9
11) Bake for 15 minutes
12) Let the cookies cool a bit and then transfer to a wire rack to cool completely.
