This is my local. I live in the pokiest suburb in sydney, with six shops in the entire town, but we have a craft shop. It specialises mostly in patchwork, but has a pretty comprehensive range of everything!
I can vouch for Flora Fabrics, also, it is pretty good.
also, there is an asian fabric shop called "My Hung" or "Muy Hung"(I'm sorry, I cannot remember), which has branches in Hurstville, Penrith and I think Cabramatta, which is pretty amazing.

I found this interesting shop in Camperdown, haven't been there yet but it looks promising: http://www.finewoolsdirect.com.au/default.asp

Pitt Trading at Rocky Point Rd Ramsgate. Fantastic range of dress fabrics, trims and great range for dance costumes. They always have something new in the store and the prices are great!
