Gluten Free Lime Pie
A quick, easy and yummy dessert to try if you're up for something different. I was very surprised that it contains little ingredients, and very happy to give it a good taste test!
Ingredients
Filling -
5 egg yolks
1 250ml can of condensed milk
125ml lime juice
Base -
1 packet of any gluten free biscuits
50g of butter
Either 12 muffin cases, or 1 cake tin
1. Preheat the oven to 180c
2. Mash up the cookies until they are all crumbs
3. Slowly add the butter (melted) and combine until all crumbs stick together
4. Spoon into the muffin cases, or pour into cake tin
5. Stick base in the oven in the meantime
6. Beat egg yolks together
7. Pour in condensed milk & lime juice and mix until combined
8. Take out the cookie base from the oven
9. Pour in the filling mix
10. Bake for 20 mins, or until all tops of the cakes are slightly browned
Once cooked, leave them to cool for half an hour and then refridgerate until cold. You might want to eat them warm, it's up to you!
