I bought my first bike since I was a kid this week – all in an effort to get more variety to my exercise schedule (yes, i have been exercising regularly since I’ve been off work) and to get outdoors more.
It’s a fold up bike, which is great incentive for me to take it over to one of the bigger parks in Sydney ride it around the tracks. (I don’t dare try and ride all the way there, I’m not suicidal!).
I totally don’t look as cute as other lady cyclists out there – my helmet feels way too big (though it fits well on my way too big head) and I have to use Jasper’s Lightning McQueen backpack to carry my phone & water as I don’t have my basket yet, but I’m having fun anyway!
I had a couple of hours to myself today to get some gift shopping done (and a much needed haircut!). The weather was so good and the alone time so nice, that i stayed on the rooftop of the carpark a little longer than one should. Woops.
nutella, strawberry & apple slice
Regan ate all/most of the macaron’s yesterday so I was still hankering for something sugary today! voila, a makeshift afternoon treat
1 small apple, sliced
2 strawberries, sliced
2 generous tablespoons of nutella (melt it in the microwave for 30 secs so it’s more spreadable)
3 sheets of filo pastry
Preheat the oven to 200 degrees celcius
Place 1 sheet of filo pastry on an oven tray lined with baking paper
Spray the filo with oil
Repeat with the other 2 filo pastry sheets
Spread the nutella onto the filo sheets, leaving a 2cm border around the edge
Arrange the apple & strawberry slices on top
Fold in the edges of the filo pastry so you get a little border
Bake in the oven for 15-18 mins or until golden brown
