every new week i’m pregnant, means another new recipe i try

Oven baked mushroom risotto
2 cups diced mushroom
1 cup arborio rice
2 1/2 cups chicken (or vegetable) stock
30g butter, chopped
3 tablespoons grated parmesan

1. Place pumpkin, rice, and onion into a large oven proof dish. Stir in stock. Top with butter. Cover dish tightly with a lid or foil.
2. Bake in a moderate (180 degrees celcius) oven for 30 to 40 minutes, or until rice is tender.
3. Stir in cheese before serving. You can also add stuff like cooked chicken, peas and corn at the end – yum!

Serves 4 (or 2 if you’re really hungry or not serving it with anything else)

guess who's on the cover?i managed to drag my parents and Regan to the gluten free expo on Saturday – more people to hold more food i buy, see…. lol. not really, i wanted to show them how cool the gluten free food is these days, and they ended up stuffing their faces with all the samples! as we entered, i noticed that a few of my photos were on the cover of the guide – thanks Cheryl!

dad was impressed with the yeo’s stand (asian food) and at one point wanted to help serve out the noodle and rice samples himself, he’s so enthusiastic! mum loved the white wings gluten free, yeast free flour – oh, and the free samples of chocolate cake.. Regan was a trooper and followed my butt around the complex. i made sure to hand him samples of pies, cakes, candy, cookies – basically anything he might like. good thing that all the food there was tasty!

i thought i would of bought more than last year, but i ended up being very good and came away with change in my pocket. my aim was to bulk up and try new things, but i could of done alot more damage if it wasn’t so busy (which is good!) and i wasn’t so .. heavy and tired. (and i had had enough of people whacking me in the belly with their giant bags, and butts). plus, these days there’s alot more available outside of expo’s which is fantastic

i liked seeing the familiar companies mix in with a few new ones – it’s encouraging to see more and more allergy aware people creating great food.

the past day or so has been tiring for me (and the bub)

tuesday night aqua class after a full day’s work, which means sitting in peak hour traffic for 2 hours, class for 2 hours and then straight to bed (staying over at my parents house, see next paragraph)

this morning, early morning appointment at the hospital (our 29 week checkup) so the drive from my parents house to the hospital in peak hour is not as bad (30 mins) as the trip would of been if i went from our apartment to the hospital (2 hours).

glucaidi was scheduled to do the glucose tolerance test today (to check for gestational diabetes) but the drink wasn’t gluten/wheat free! i need to schedule to have a blood test after fasting for 8 hours***, hopefully i can do this on sunday morning (it needs to be done before i hit 30 weeks). we had a good check up though, no problems reported and none brought up by the midwives. they measured the fundal height (28), we heard the heartbeat (all good) and they felt for the bub (who was head down!). the new clinic location is very nice, the rooms are more modern and you don’t feel like you’ve stepped into a time machine and brought back to the 70’s.

so after all that, i was out of the hospital at about 11am (yep, probably spent 4 hours there for a 15 min check up and a general blood test to check iron levels etc). went out to arrange the first of many things needed for the settlement of our new property…. spent the rest of the afternoon with my dad picking out security doors & screens, and blinds for all the windows.

dad and i also did our sums, and our new loan isn’t enough – we hadn’t applied for enough $ so we had to put in a reapplication today. hopefully that works out, cause if it doesn’t …. well, i ain’t going to be happy. we just don’t have a spare $$$K around! (who does?)

managed to get home just before 5pm, had an early dinner with Regan and crashed on the couch, laptop still sitting on my lap (so sexy!). now, i’m awake but definately ready to head to bed. so so tired.

tomorrow i need to call about the telephone line, internet connection, water, gas & electricity. we’re going to try and get it all set up pretty quickly because we want to move in asap – but can’t, because i need the net connection (which also means i need electricity and a phone line connected) for work. the net connection might take 3 weeks to set up AFTER we have electricity and a phone line though, so hopefully those 2 things can be organised before settlement but i’m not sure it can be … oh well, at least things are moving along! i think after this initial exchange and set up, things will be OK – i give it 6 weeks for everything to be on it’s way and we’ll be moved across. i’m just grateful i’m not 8 months + along and doing all of this, cause it’s already draining the energy out of me and i’m not yet 7 months.

oi vey, i’ve totally forgotten about SELLING our apartment. that’s a whole other can of worms. hopefully that won’t be too bad – just need to get the solicitor to send the contract to the agent, clean out our apartment as much as possible while we’re still living in it, have an open inspection or two and see how we go from there… that will need to be done in the next 2 weeks I figure

gr, better stop gabbering on. i get talky when i’m tired and need to process things on paper!
